Travel Carbs - Sounds like a mythical thing we either dream about or dread eating. Cold Oatmeal, baked oatmeal, old hard over cooked over microwaved potatoes. So, looking for an alternate carb source that can travel? How about some Sweat Potato Oatmeal muffins? I have been using these when on the road. Once mixed and baked, they are a great source for on the go!
In a bowl mix 8 oz sweet potato( I first bake them in the oven the mash them into like mash potatoes. 2 cups dry oat meal 1 cup egg whites 1 whole egg 1 tbl sp of vanilla Cinniamon 1/4 cup splend Get a muffin pan with 12 and spray with pam Cook at 350 for 30 minutes And Eat mmmmmmmmmm... I have been using this while dieting for my show, it feels like im eating bad Comes out to 18 carbs per muffin
