 Fish is one of the simplest foods to prepare. This should do the trick for ya.
This recipe is for 2 servings:
2 garlic cloves, thinly sliced 2 large squares of parchment paper, or foil 1 bunch of arugula, cut off the stems 2 orange roughy filets 1 cup of chopped tomatoes, remove the seeds balsamic vinegar salt and pepper, (kosher or sea salt)
What your going to do is make two foil pouches. One for each fish. Lay one piece of foil down and place half of the arugula down on one side. Don't put the arugula directly in the middle. Place it on one half of the foil because your going to cover it with the other half of the foil and crimp it, like a package. Now take half of 1 of the garlic cloves and place the slices on the arugula. Now salt and pepper one of your fish filets and place it on top. Now place 1/2 a cup of the chopped tomatoes on top of that. Then the other half of the garlic clove. Drizzle the vinegar on top. Now crimp the package.
Now you should have exactly half of the ingredients leftover. Repeat the step above to make a second pouch. You can eat this one the next day. If you want you can double the recipe for 4 days worth of fish, but I don't recommend making anymore than that. Fish doesn't keep very long in the fridge. Cooked or fresh. So with this recipe it makes enough for two days worth. See what I am saying?
Ok, now that your pouches are ready, place them on a baking sheet. Bake at 350 for 15 minutes.
Now here's another recipe you can use for variation and this one is just as simple.
slice off a 2 inch thick slice of onion 2 fresh parsley sprigs 2 anchovies 2 teaspoons of drained capers 1 garlic clove 2 roughy filets 1/2 lemon
Preheat your broiler. Cut the first five ingredients up into a fine mince. Now spray a baking sheet with non-stick spray. Place the fish on the baking sheet then sprinkle the mixture you just chopped up on the filets. Kind of rub it into the fish. Season with salt and pepper, remember kosher or sea salt. Place the fish under the broiler. Remember also to move your oven rack into the slot that is closest to the broiler. So that would be the slot at the very top of the oven. Broil for 5 minutes. Remove the fish and squeeze the lemon half on the fish.
