Muscle MAyhem's Recipe - Rice FiestsFor body builders, sometimes thinking up new and creative ways to prepare carbohydrates eludes us. Every once in a while, just adding a couple of basic ingredients will add enough zing to a dish to make you feel like you are eating something you shouldn’t - when it is still low-fat and healthy. The next time you are looking for an alternative to plain rice - try this easy side dish.

INGREDIENTS:

  • Pam Cooking Spray (Olive Oil Flavor)
  • 1 cup uncooked white rice
  • 1 small onion – finely chopped
  • 2 cups low sodium chicken broth
  • 1 cup low sodium (medium) salsa

DIRECTIONS
:   

1.     Over medium-high heat, heat a large skillet until hot.  Spray skillet with thick coat of Pam cooking spray, add rice and add another coat of spray

2.     Cook rice and stir occasionally until lightly browned.  Remove rice to bowl.

3.     Put chopped onion in the same skillet and cook until onion is transparent.  Add the broth and salsa to onion in skillet, stir until well mixed.  Add rice back into skillet and bring to a boil.

4.     Reduce heat to low heat.  Cover skillet and simmer rice until liquid has cooked down and the rice is tender.  Serve while hot.
